Edible Vancouver + A Cherry Clafoutis

It is officially the first day of summer. You couldn’t tell by looking out the window as the sun is hiding behind thick cloud but I am hopeful that the sun is on its way and will stick around for a while. I cannot wait for the abundance of summer fruit that is ripening as I write this post. I dream of cherry clafoutis, apricot and peach galettes, a summer berry pavlova with soft whipped cream and bowls of juicy ripe fruit to snack on. I have enjoyed the first of the strawberries and I know raspberries are not far off.

I thought the first day of summer would be a perfect day to share some photos from a cherry clafoutis shoot I did to accompany Sharon Hunt’s story about cherries and her delicious recipe for clafoutis for the Summer edition of Edible Vancouver Magazine. While local cherries have not arrived quite yet, I imagine it won’t be long and it is great to have a few recipes in line for when they do.

Apricot Cherry Galettes

I have been in a fruit frenzy this week eating cherries, apricots, peaches, raspberries, blueberries and even loganberries from my parents garden. Summer fruit is here and then it is gone in the blink of an eye. Don’t hesitate when the perfect blushing apricot catches your eye at the market. This galette recipe is the ideal summer dessert. It is rustic and works with any type or combination of summer fruit. Even the most reluctant of dessert eaters can’t pass up flaky buttery pastry filled with soft summer fruit and if they can muster the willpower that just means more for me and you.

I have made this recipe with peaches and blackberries, peaches and plums and various other combinations. You really can’t go wrong. I was inspired by apricots and cherries as they go beautifully with almonds. When cooked apricots have such a beautifully intense flavour and the perfect sweet/tart balance.

Summer Cherry Tomato Spaghetti

This is the perfect summer recipe. In the time that it takes you to boil your water and cook your pasta the rest of the dish is ready. One pot, one bowl and voila dinner is ready. But don’t let the simplicity of this recipe fool you. The flavours of fresh tomatoes off the vine, basil, garlic and olive all merry together to make a beautiful little sauce. I often find the simplest recipes that let the ingredients shine through are the most satisfying and delicious.

Now that summer is finally heating up a bit, we are moving from greenhouse tomatoes into the field ripened ones. Field tomatoes are the best in terms of flavour and taste and the smell on your hands from the vine is sure to remind you of a warm summer day.

The first field ripened tomatoes to appear in the garden or at the farmers market seem to be the Sun Gold variety. These cute little golden tomatoes are so sweet and full of flavour you wouldn’t believe it. These ones were grown in the Similkameen Valley by Klipper’s Organic Acres. You could use larger varieties of tomatoes once they are ripe and chop them into bite sized pieces if you prefer or if that is what you have growing in your garden.
