Fresh Tomato Sauce

Tomatoes are A-M-A-Z-I-N-G right now.  They come in more colours, shapes and sizes than you could dream of and they are dripping with juice and beautiful flavour.  This sauce can be cooked up in the time it takes to boil a pot of water and cook your pasta, there is no excuse to order take out!  Just a few simple ingredients makes for perfection, the Italians wouldn’t have it any other way.

Fresh Tomato Sauce

1 1/2 – 2 pounds fresh tomatoes, a variety is great

1 large clove garlic

A couple glugs of olive oil

A handful of fresh basil

Options: pinch chili flakes, 1/2 diced onion, a couple good quality sausages

Dice the tomatoes.  Cut the garlic into thin slices.  Heat a large saucepan over medium heat, add the olive oil.

Quickly saute the garlic until fragrant but not browned.  Add the tomatoes.  Cook for 5- 10 minutes, until the tomatoes begin to break down and get saucy.  Add fresh basil.

Serve over your favourite pasta shape with a grating of fresh parmesan cheese.
