Peach Vanilla Bean Popsicles

My mind is a twitter with new ideas and inspiration. I attended a food photography workshop in Whistler over the last 4 days with Aran from Canelle et Vanille and many amazing and creative women. But that is another blog post.

I wanted to share this delicious popsicle recipe with you first before the warm days are gone and peaches are only a distant memory. I can feel fall creeping into the air and into the light. While I love fall, I am not quite ready to say goodbye to summer and the ease of this season.

Popsicles are a real summer treat, something I used to make with my mom on warm summer days. They are the perfect pick me up on a hot afternoon.

With only five ingredients, this recipe is very simple and as such relies on having very flavourful, sweet and juicy peaches. Be sure to get tree ripened fruit and let the peaches sit out on the counter for a few days allowing them to fully ripen. You could also use frozen fruit if peaches aren’t in season when you makes these.

Perhaps you have some little ones that are eager to help in the kitchen or you would like to feel more like a kid again yourself. Either way, peach vanilla bean popsicles are the answer. I hope you take advantage of the last of the summer fruit and soak up the remaining warm days of summer.

Peach Vanilla Bean Popsicles

Makes 6 popsicles

1 pound peaches, peeled, pitted and chopped (about 4 medium)

2 tbsp mild flavoured honey (I used wildflower)

1 vanilla bean, split and seeds scraped

1/4 cup coconut milk

1/2 cup plain yogurt

Place the peeled and chopped peaches in a food processor or blender and puree until smooth. Add the honey, vanilla bean seeds, coconut milk and yogurt and blend until combined. Pour the mixture into popsicle molds and freeze until set, overnight or about 3-4 hours.
